The tangy dressing of vinager, olive oil, sugar, garlic and pepper are a great accompaniment to the salad of Romain lettuce, red onion, tomato, spiral noodles and teriyaki marinated chicken with the toasted nuts and feta cheese bringing a sharp nutty finish.
Directions
Dressing and chicken should be prepared the night before.
Chicken - You can use leftover chicken or bake a chicken breast. Once chicken is cooked and cooled shred and place in ziplock bag or container with teriyaki sauce to marinade shaking occassionally to coat well.
Dressing - combine vinager, olive oil, sugar, garlic and pepper in a jar, shaking well to combine and dissolve sugar. Rerfridgerate and shake often.
Salad - boil and cool spiral noodles completely. In a large bowl combine with shredded romain, chopped onion and tomatos. Add marinated chicken and dressing and toss well. Finally top with feta cheese and toasted nuts and serve.
