Introduction

A delicious spicy soup, great for any time of year! A delicious spicy soup, great for any time of year!
Number of Servings: 8

Ingredients

    1 lb chicken breast
    1 Tbsp oil
    1/2 onion
    4 cloves of garlic, grated
    1/2 jalapeno, sliced small
    chili powder
    cayenne
    salt (to taste)
    1/2 can cannellini beans
    1/2 can red kidney beans
    32 oz chicken stock
    large can diced tomatoes
    small can of tomato paste
    Green giant frozen white shoepeg corn

Directions

Cut chicken into small chunks, season with salt & chili powder. Sauté chicken and onion in a pan, on medium heat, with oil until cooked. Slice the jalapeno very small and grate the garlic. Add both into pan and cook for 2 minutes. Add salt, cayenne, and chili powder to taste (i used i lot because i like it spicy)

Transfer the mixture to a large pot. Add the beans in, and let cook for about 5 minutes. Add the chicken stock (i used store bought), a large can of diced tomatoes, and a small can of tomato paste.

Microwave the green giant frozen corn for 3 minutes, then add into the soup.

Simmer soup for 20 minutes.
