Introduction

Ingredients

3 cups uncooked brown rice (long grain), cooked
1 1/2 cups fresh mushrooms, sliced
1 medium onion, chopped
1 green pepper, chopped
1 block extra firm tofu
1 Tbsp. sesame oil
1 tsp. olive oil
5 Tbsp. low-sodium/lite soy sauce
Directions
1. Prepare tofu by placing between paper towels and pressing between plates (with cans on top or other weight) to remove excess water.
2. Chop onions and add to hot wok or pan, cook until translucent. Add garlic, green pepper, and mushrooms and cook thoroughly (mushrooms should be soft).
3. Remove veggie mixture and, in hot pan, add sesame oil and a tablespoon or so of soy sauce. Add tofu after chopped into bite sized pieces. Cook.
4. Add vegetables back in and continue to cook. Once cooked thoroughly, add rice in. (I used 3 cups uncooked, cooked in the rice cooker and added all of the brown rice into the pan.) Toss together and add more soy sauce according to your tastes. You can season with salt/pepper or other spices, but it's not exactly necessary.
5. Once heated through, serve hot.
