Introduction

I found this recipe at food.com. I had never cooked with lentils before and this was the top rated recipe, so I decided to try it. I loved it and it was quick to put together! Number of Servings: 6

Ingredients

    2 cups chicken broth
    1 can diced tomatoes, drained
    minced garlic (put it as much as you like)
    Italian seasoning (same use as much as you want, I used 3tsp)
    3/4 cup of lentils
    1/4 cup brown rice (not instant)
    Shredded mozzarella or cheddar cheese
    3/4 cup onion chopped

Directions

Heat oven to 400 degrees.
In baking dish add all ingredients except cheese. Stir & Cover..
Put in oven for 50 minutes.
Take out (there will be a little liquid left on the top) and add cheese on top. I used about 1 cup.
Leave uncovered and cook for about 15 more minutes or until liquid is gone.
Take out and leave on counter for about 10 minutes.
Then enjoy!
