Use a Pan that can be used on top of the stove then transfer to the broiler.

Ingredients

    2TBS Smart Balance
    1/2 c onion
    1/2 c red Bell
    1/2 C Zucchini
    2 small plumb tomatoes diced
    1 Tbs Basil chopped fresh
    1/2 c egg substitute
    1/2 c 1% cottage cheese
    1/4 c fat free evaporative milk
    3 oz shredded Monterey Jack cheese


Directions

Sautae veggies in smart balance
Blend egg- cottage cheese & milk
Pour mixture over sautae veggies
cook until bottom is set top is wet
transfer to skillet to broiler- broil 2-3 min
sprinkle with cheese then broil till melted
