Introduction

Inspired by a turkey meatloaf recipe from Real Simple. I substituted turkey for ground sirloin, breadcrumbs for oatmeal and reduced sugar ketchup instead of regular ketchup to make it more South Beach friendly.

Serve with mashed sweet potatoes and green beans for a delicious meal!

Ingredients

    1 lb. lean ground sirloin
    1 c. onion, chopped
    4 c. fresh spinach, chopped
    1/4 c. Old Fashioned Quaker Oats
    2 T dijon mustard
    1/4 c. liquid egg substitute
    1/4 c. Heinz One Carb Reduced Sugar Tomato Ketchup
    salt and pepper

Directions

Heat oven to 400° F. In a bowl, combine the ground sirloin, onion, spinach, parsley, oatmeal, mustard, egg white, and ½ teaspoon each salt and pepper.

Transfer the mixture to a baking sheet and form it into a 10-inch loaf. Spread with the ketchup. Bake until cooked through, 45 to 50 minutes.

Top with more reduced sugar ketchup or warm marinara sauce (optional).

    Very Good
    Was rather onion-y, but the kids ate it. They weren't thrilled about the spinach in there but if I'd chopped it finer, may not have been an issue. Substituted "feldsalat" for spinach since my market here didn't have fresh spinach - 1/16/14
