Ingredients

2 tablespoons beaten egg white
2 1/2 tablespoons dry italian bread crumbs
1 tablespoons grated Parmesan cheese
1/4 teaspoon cayenne pepper
1/4 teaspoon pepper
1 large sweet potato (12 ounces), peeled
Directions
1. In a bowl large enough to fit the sweet potato strips, whisk egg white.
2. Cut sweet potato into 1/4-in. strips. Add to egg mixture to coat.
3. Mix bread crumbs, cheese, cayenne and pepper.
4. Sprinkle the drink ingredients to the egg white coated sweet potato strips and toss to coat.
5. Arrange potato strips in a single layer on a baking sheet coated with parchment paper.
6. Bake at 450° for 25-30 minutes or until golden brown and crisp, turning once halfway through.
