Ingredients

    1 cup whole wheat flour
    1.5 tsp baking powder
    1/4 tsp each, baking soda, ground cinnamon, and table salt
    1 egg
    1/2 cup fat free half and half
    1/2 cup sugar
    1/4 cup unsweetened applesauce
    1/2 tsp vanilla extract
    1/2 cup dried cranberries
    1/2 cup hulled, unsalted sunflower seeds

Directions

preheat oven to 400. coat a mini muffin pan with nonstick spray.
whisk together flour, baking powder, baking soda, cinnamon, and salt in a bowl. In a separate bowl, whisk together egg, half and half, sugar, applesauce, and vanilla.
Stir wet ingredients into dry ingredients until combined.
Toss cranberries and the sunflower seeds into the batter.
Fill muffin cups 3/4 of the way. Bake until a toothpick inserted comes out clean. Approx 15 mins.
