Ingredients

    1 lb baking potatoes peeled and diced
    8oz green beans cut into 1/2 pieces
    1 pie crust pressed into 9" pie plate
    1tbsp olive oil
    1 lg yellow onion, diced
    1 med carrot, chopped fine
    1 1/2 cups chickpeas
    1 cup peas
    1 tsp grated fresh ginger
    1 tbsp curry powder
    1/2 tsp ground coriander
    1/2 tsp salt
    1/4 tsp cumin
    1/4 tsp cayenne


Directions

Steam potatoes, set aside. Steam green beans, set aside. Bake pie crust at 400 for 10 min, remove and set aside. Turn oven to 350. Cook carrots and onion in oil until soft. Stir in spices, remove from heat, add potatoes and chickpeas and coarsely mash. Add peas and green beans to all and stir to combine. Spread into the pie crust and bake until golden and crust is browned, about 45 min.
