Number of Servings: 6

Ingredients

    Frozen Cod fillets - 6 pieces
    2-3 cups of sliced potatoes - uncooked
    Olive oil, about 2 Tablespoons

Directions

Pour 2 tablespoons of olive oil in a skillet (iron skillet). Add sliced potatoes to the bottom and spread around. Place frozen cod fillets on top of the potatoes. Season as you wish with options such as salt, pepper, parsley, lemon juice, or lemon garlic. Place lid over the skillet and cook on medium heat 20 minutes until fish is flakey. You'll find the potatoes are done. I like to remove the lid and cook another 5 minutes if there is liquid in the pan to make the potatoes crispy on the bottom.

Serving Size: one fish fillet and about 1/2 cup of potatoes

    Very Good
    Easy to make, if you have a large cast-iron pan. I seasoned with lemon juice, lemon pepper, thyme, and parsley. About halfway through, I added a couple of cups of chopped kale and a half-cup of sliced, fresh mushrooms to make a healthier one-pot meal. - 12/8/11
