I barbecue these on med-low flame in a veggie basket. Check and stir (turn) every few minutes. My favorite combo is with baked potato and pork tenderloin. Ingredients

    Sweet red pepper, 1 med
    Green pepper, 1 med
    Red onions, 1
    Zucchini, 1 small
    Mushrooms, fresh, 6 med
    Tomato, 1 large or 10-12 cherry tomatoes
    salt and pepper

Tips

Barbecue basket is the best! Preheat, then brush with scant amount of canola oil to help keep veggies from sticking.


Directions

Cut all veggies to approx 1-2" pieces.
Sprinkle lightly with salt and add pepper to your taste.
Bbq approx 20 minutes or less, turning as needed.
