Number of Servings: 4

Ingredients

    8 cups kale, fresh, chopped
    6 slices turkey bacon
    2 Tbsp butter

Directions

Melt the butter in a large wok or wok-like frying pan on low-medium heat. Lay in strips of turkey bacon and turn occasionally until crisped up around the edges. Remove strips of turkey bacon and set aside on a cutting board. Put fresh chopped kale into the pan with flavored butter and stir frequently to distribute butter while the kale is wilting.

While cooking the kale, chop the slices of turkey bacon and set aside.

After about 10 minutes of cooking, the kale has a shiny dark green color, and is well flavored and steamed, and has reduced to about 4 cups. Add the chopped turkey bacon back in and stir to mix.

For best taste, serve right away. Makes 4 1-cup servings.

Optionally, add pignoli (pine nuts), chopped grape tomatoes, lemon juice or your favorite spice blend.
