Introduction

Ingredients

    1 c. uncooked mung beans (or other beans)
    3 c. water
    1/4 large white onion, chopped
    1/4 large butternut squash, chopped
    3 carrots, chopped
    Salt to taste

Directions

Put pre-soaked mung beans and the water in a pot on low heat. A few hours later, when the mung beans are soft, saute onion in a pan. Add carrots and squash to the pan and saute for a few minutes. Transfer all the vegetables into the mung bean pot. Cook over low to medium heat for a while, stirring occasionally. Salt to taste. When the vegetables are soft, the soup is ready to serve.
