Introduction
I came up with this recipe while traveling for work. I try to eat well while on the road but the kitchens available make cooking a bit of a challenge. This was super easy to make with limited cooking tools and only took 15 minutes total to make. I went with turkey tenderloin (breast) over chicken because it was cheaper but you could go either way. Take out the meat all together and it still is a flavorful vegetarian meal or side dish.Mushrooms are also a great addition to this dish and/or diced onions (carmelized). Ingredients
-
-2.5 cups Whole wheat pasta (dry) - I use rotini
-1 pound turkey tenderloin (can sub chicken or leave out all together)
-3 cups fresh baby spinach
-4 tbsp sun dried tomatoes
-1 tbsp pine nuts
-2 tbsp crumbled feta cheese
-.5 tbsp minced garlic
-.5 tbsp olive oil
- italian seasoning, salt and pepper to taste
Directions
Boil, cook and strain pasta.
On medium-high heat add .5 tbsp of olive oil, add diced turkey tenderloin. Add minced garlic, italian seasoning, salt and pepper. Complete cooking of meat.
Take heat down to medium and add sun dried tomatoes, spinach and pine nuts. you may add additional seasoing if you wish.
The meal can be served two ways:
1.) Serve the veggie/meat mixture over the pasta
2.) Add the pasta to the mix and combine (tastes better this way)
Sprinkle feta cheese on top of the dish and serve.
Serving Size: Makes four servings a little over a cup each
