Introduction

This is a great way to use cooked chicken breast and healthy version of my favorite pizza - Thai Pie. I used english muffins, but you can use a whole wheat pita if you'd prefer. Ingredients

    Ingredients:
    Whole Wheat English Muffin or whole wheat pita
    Pizza Sauce (1 Tablespoon), 2 serving
    Cooked chicken Breast
    2% Mozzarella shredded, 0.25 cup
    Green and/or red bell peppers, 2 tbsp
    Onions, raw, 2 tbsp chopped
    Cocktail Peanuts (a few)
    Thai Seasoning (sprinkle on top)

Directions

Spread pizza sauce on either two english muffins or one whole wheat pita. Top with cooked cubed chicken, onions, peppers, a sprinkle of thai seasoning and a few peanuts and then top with mozzarella cheese. Toast under broiler until cheese is browned. These freeze and refrigerate well.

Serving Size: Makes 2 muffin pizzas or 1 pita pizza
