Ingredients

    1 cup brown rice, uncooked
    4 slices turkey bacon
    1 bell pepper, chopped
    1 medium onion, chopped
    2-4 cloves garlic, minced
    1 bag frozen collard greens, thawed
    1/4 tsp. cayenne
    1 tsp Mrs Dash Ex. Spicy spice mix
    1 cup brown rice
    2.5 cups unsalted chicken stock
    2 Tbs cider vinegar




Directions

Cook bacon in non-stick pan w/ 1 tsp. olive oil. When just about crisp, about 2 min, add onion, peppers and cook until slightly browned, aprox 5 min. Add garlic and seasonings and cook 1-2 more minutes. Add 2 cups water or chicken stock and stir to loosen bits from pan. Add vinegar.
In lg pot add 1 cup water or stock and rice bring to a boil and cut down to low. After 20 min add cooked veg's and collards. Stir and continue to cook until water is absorbed.
