Number of Servings: 48

Ingredients

    Use 3 well-ripened bananas, well mashed
    Use 1 cup Splenda as a sugars substitute
    Use 1 cup skim milk in place of whole milk
    *not used in this receipe, but use wheat flour instead of white flour - 3 cups
    2 teaspoons of baking soda
    1 teaspoon of salt (optional)
    2 eggs, ensure well beaten

Directions

Set oven to 350 degrees.
Use non-stick cooking spray to 9-inch by 13-inch pan.
Mix in a bowl: 3 ripe bananas (well mashed), peanut butter and milk. Ensure mix is not too lumpy. Beat 2 eggs well and add to mix.
Mix in a separate bowl and sift together: 3 cups of flour, 1 cup of sugar/substitute, 1 teaspoon of salt and 2 teaspoons of baking powder.
Add both mixes together and stir well, until all ingredients are mixed in. Place in pan and spread out (mix will be somewhat sticky). Bake for 50 minutes and cut into 2-inch squared pieces.
