Introduction

This is a recipe I use to make a filling for quesadillas, it could also be used with tacos in place of beans, or as a bean dip, etc. This is a recipe I use to make a filling for quesadillas, it could also be used with tacos in place of beans, or as a bean dip, etc.
Number of Servings: 8

Ingredients

    1 can black beans, rinsed and drained
    1 can Chipoltle Peppers
    1/2 an onion
    1/4 tsp Cumin (or 1/8 tsp taco seasoning)

Directions

Chop the onions, add all ingredients to blender or food processor and blend until smooth.

Serving Size: Makes 2 cups filling, I typically use about 2-4 tbs filling per person depending on the size of the tortillas

    One can of chipotle peppers results in a very spicy filling. Reducing the number of peppers or exchanging the chipotle for bell pepper can make a less spicy version. - 1/10/15
