Ingredients

    * Mushrooms, fresh, 400 grams
    * Onions, raw, 263 grams
    * Leeks, 3 leek
    * Grapeseed Oil, 3 tbsp
    * *All White 100% Liquid Egg Whites, 1 cup
    * Egg, fresh, 1 large
    * Milk, 2%, 2 cup
    * Mozzarella Cheese, part skim milk, 193 grams, grated
    black pepper
    salt
    dash of cayenne
    greek seasoning

Directions

Fry up onion, leeks and mushrooms in oil until soft. Mix the rest of the ingredients in a bowl. In muffin tins, add mushroom mix, then pour egg-milk cheese liquid on top. Bake for ca 30-40 min, check often at the end so it doesn't get burned on top.

Serving Size: makes 28 small quiches (make in muffin cups)
