Ingredients

150g pistachio nuts
60g plain flour
155g icing sugar
30g desiccated coconut
5 egg whites
185g butter, melted & cooled to room temperature
55g caster sugar
1 Tbl espress coffee
Directions
Place the caster sugar, coffee and 1 1/2 tablespoons of water in a small saucepan over medium heat and bring to the boil. Simmer for 1-2 mintues or until the mixture becomes syrupy. Set aside.
Preheat the oven to 190C. Grease 10 125ml capacity friand tins.
Roughly chop one third of the pistachios and set aside.
Sift flour and sugar into a large bowl and set aside. Place the remaining pistachios in a food processor and process to fine crumbs. Stir ground pistachios and coconut into the flour mixture. Whisk egg whites in a separate bowl until frothy, then stir into the dry ingredients until just combined. Pour in the melted butter and mix well.
Spoon the batter into the prepared tins and sprinkle the reserved chopped pistachios on top. Bake for 20-25 mintues or until a skewer inserted into the centre of the friand comes out clean. Set aside to cool in the tins for 5 minutes, then turn out onto a wire rack. Spoon syrup over the friands and allow to cool.
