experimenting in my kitchen. Came up with this variation of black bean chili from "I can't believe its not fattening" cookbook. A tasty high fiber high protein meal solution. Don't let the sodium content scare you, rinsing the canned items can help reduce it--and there are also low sodium options you could substitute too. Ingredients

1 can black beans - drained and rinsed well
1 chopped jalapeno pepper
approx 2 T chopped red onion
approx 1 T chopped cilantro
Canned fire roasted tomatos, drained and rinsed well
3 garlic cloves
sprinkle of low fat mozzarella (optional)
Crumbled goat cheese (optional)
1/2 tsp cumin powder
1 squirt lime juice
2 T choopped Fire roated peppers (jarred)
Directions
drain and rinse all canned items (helps reduce the sodium). Put black beans in microwave safe bowl. Chop onions, cilantro, jalapeno, and peppers. Coarsley chop garlic and brown. When done toss with beans adding in lime juice and cumin. Sprinkle with cheese (optional) and microwave for 1 minute. Enjoy.
