Number of Servings: 6

Ingredients

    3 boneless chicken breast ( no skin)
    1 medium - large white potato
    1/2 cup lemon juice
    1/2 cup of onion sliced
    2 tbspcurry powder
    1 tbsp garlic ( roasted and diced preferred)
    2tbsp flour
    1tbsp onion powder
    1tbsp ground black pepper
    2tsp salt (kosher is preferred) optional
    1 tsp mrs dash original blend
    1 sprig of thyme ( optional)
    1 cup broth
    1 & 1/2cup water

Directions

cut chicken into medium pieces
in a medium bowl pour in lemon or lime juice and "wash" chicken in it.
strain juice from bowl and add mrs. dash , salt , pepper, garlic powder, onion powder and 1 tbps of curry .
mix ingredients until all chicken pieces are covered with seasoning ( let sit in refrigerator for two hours or overnight to marinate if preferred) .

peel and dice potato into medium pieces. set aside.

in a medium/ large frying pan add 1/4 cup water , onion, diced garlic, and chicken.
cook on medium heat turning the chicken until chicken turns white on all sides.
add 1 cup of water and potatoes to pan. let simmer.
Stir and blend in 1 tbsp curry powder.
when water seems low - add another cup of water.
cut chicken in smaller pieces while in pan and blend pieces so that they are covered with sauce.
blend another tbsp of curry powder to pan and let simmer.
add thyme and cover pan.
let simmer on medium heat for five to ten minutes.
lower heat and let cook until chicken is tender .
Continue to add water if needed to keep sauce from dissolving.
mix flour with 1/2 cup of cold water then stir into mixture to thicken sauce .

Serve with rice and beans / plaintain and cabbage
