Introduction

A wonderful chicken salad recipe that I've adapted and use the chicken-flavored seitan as a substitute A wonderful chicken salad recipe that I've adapted and use the chicken-flavored seitan as a substitute
Number of Servings: 4

Ingredients

    1 package Chicken-style seitan (or regular)
    .5 tbsp butter or margarine (I used smart balance)
    1 cup chopped celery
    3/4 apple, chopped
    1/2 cup Greek yogurt (I used 2% fat)
    1 tbsp honey mustard
    3 tbsp dried craisins (or just dried cranberries or just raisins)
    3 tbsp sunflower seeds, roasted
    1 tbsp curry powder
    1/4 tsp cumin


Directions

- Chop the seitan and saute in the butter in a pan over medium heat under heated through and slightly brown (about 10 minutes)
- take pan off heat and let cool
- in a big bowl, combine the celery, apple, sunflower seeds, and craisins
- Once the seitan is warm/heading towards cool, add that to the bowl as well
- mix in the 1/2 cup Greek yogurt, curry powder, and cumin

Enjoy!

I normally eat it by itself, but I occasionally make a sandwich out of it too, or put it on top of salad. It taste wonderful at room temperature and cool.

Store in the refrigerator.

Serving Size: makes about 4 cups

    Bad
    While the basic salad ingredients had promise, the dressing was horrible. Yogurt with curry on apples? I should have known better. I will use a different dressing next time. - 7/21/12

    Incredible!
    Have Mercy! This was delicious! I made it with olive oil mayo, and forgot the sunflower seeds, but didn't matter one bit. Very good. I had it over salad greens, but I'm sure if I had some crusty bread it would be just as yummy. Thanks so much! - 6/1/11
