Soak beans overnight.
Turn pot to medium heat. Rinse beans and drain.
Chop bacon and add to pot for 6-8 minutes, until fat rendered. Chop onion and add to pot next for 6-8 minutes. Add minced garlic to pot and stir for one minute.
Add rinsed beans, 32 ounces of water and chicken stock to pot. Continue cooking over medium heat for 90 to 120 minutes.
Season beans with salt and pepper. Add butter and remove from heat. Add rosemary.
Serving Size: makes 8 - half cup servings
