Ingredients

Whole Grain Quinoa 0.5 cup (dry)
Milk, 2%, 0.5 cup
Water 1/2 cup
Broccoli, fresh 1 crown chopped
Carrots, 2 small shredded
Mushrooms, chopped1/4 cup
Bell Pepper - Orange 1/4 chopped
Ricotta Cheese 15 oz container
Egg, fresh, 2 medium
Scallions, raw, 1/4 cup, chopped
Oregano, fresh, 1/4 cup, chopped
Reduced Fat Cheddar Cheese, 4 oz
Cheese, Trader Giotto's Quattro Formaggio 3 oz
Directions
Pre-heat oven to 350 degrees.
In a sauce pan add together quinoa, milk and 1/2 cup water. Bring to a boil and simmer until liquid is absorbed. Salt to taste.
Steam broccoli, mushrooms, carrots, and pepper together until cooked.
Mix together ricotta, eggs, cheese, quinoa, vegetables, scallions and herbs. Spread into a baking pan.
Bake at 350 until browned on top. About 40-50 minutes.
Allternate: You could bake it in a pie crust.
Serving Size: 10 pieces of about 4 3/8 oz.
