Introduction

I wanted something light and quick to go with my dinner and the beautiful colors of summer squash and zucchini was perfect. I wanted something light and quick to go with my dinner and the beautiful colors of summer squash and zucchini was perfect.

Ingredients

    1 cup of thinly slice zucchini
    1 cup of thinly sliced yellow summer squash
    2 tsp of olive oil
    1/4 cup of purple diced onion
    1/2 tbsp of Parmesan Cheese

Directions

On the stove top in a frying pan, add your olive oil, then add your onion, squash and zucchini and stir until cooked, about 7 minutes. The sprinkle your Parmesan Cheese.
