Ingredients

    1/4 c Extra Virgin Olive Oil
    4 large onions, sliced
    2-3 sprigs of fresh thyme or 1/4 tsp dried
    1 bay leaf
    1 whole head of garlic, cut crosswise through the equator
    salt and pepper to taste
    5 cups of vegetable stock
    2 Tbsp cognac
    2 Tbsp parsley leaves for garnish

Directions

Heat oil over medium heat.
Add onions and cook until soft, 35-40 minutes; stir occasionally.
Add thyme, bay leaf, garlic, salt and pepper. Cook for 1 minute.
Add stock.
Bring to a boil.
Turn heat to medium, simmer for 15 minutes.
Garnish and serve hot.
