Ingredients

12 oz Pork Tenderloin
4 tbsp light soy sauce
6 tables spoons hoisin sauce
1 tbsp rice vinegar
1/2 cup Pinapple or Apple Juice
1 tbsp corn starch
1 tbsp sesame oil
1/2 cupstarch
2 clove garlic
1/2 tsp ginger (optional)
2 cups bok choy, chopped
1 cup red pepper slices
1 cup snow peas
4 cups cooked brown rice
Directions
Makes 4 servings
Combine soy and hoisin sauces, vice vinegar and juice in a bowl, mix well. Place pork in slow cooker, pour sauce overtop. Cook on "low" in slowcooker for 8 hours or on high for 4 hours.
Remove pork from slowcooker and pull apart with 2 forks. In a bowl, whisk cornstarch and water together then add to liquid remaining in slowcooker. Return shredded pork to slowcooker
In a wok or frying pan, heat sesame oil on medium heat, add garlic and ginger and saute until garlic is softened. Add snow peas and peppers, 2 minutes later add bok choy. cook until
white part of bok choy is just starting to soften.
Serve 1/4 vegetables of a 1 cup bed of brown rice, with 1/4 of pulled pork and juice overtop. Serve.
