    1 Tbs. peanut butter
    2 Tbs. 100% pineapple juice
    1 Tbs. water
    1 tsp. low-sodium soy sauce
    2 cups broccoli florets
    1/2 cup shelled edamame
    1/2 cup cooked brown rice

Directions

Whisk together 1 Tbs. peanut butter, 2 Tbs. 100% pineapple juice, 1 Tbs. water, and 1 tsp. low-sodium soy sauce. Toss with 2 cups broccoli florets and 1/2 cup shelled edamame; sauté 8 minutes. Serve over 1/2 cup cooked brown rice.
