Ingredients

1/4 tsp salt
1 c pure pumpkin puree
1/2 c packed brown sugar
1c light coconut milk
1/4 c olive oil
1 1/2 oat flour (oat flour can be bought at the store or made cheaply and easily with a blender/food processor and plain oats)
1/2 white flour
1 tsp baking soda
1 tsp pumpkin pie spice
1/2 cup dried coconut flakes (nutrient info is for pure coconut- no sugar or oil added)
2 tbsp Honey
Directions
Combine oil, and honey together in a mixer or mixing bowl. Then add sugar and honey. Blend well.
Add coconut milk.
Seperatly combine oat flour, white flour, baking soda, and pumpkin pie spice. Blend well with a wisk or sifter.
Add the dry ingredients to the wet slowly. Blend until well combined. Stir in coconut flakes.
Pour batter into bread loaf, 9*13 pan, or muffin cups. 18 servings per recipe.
Bake at 350 muffins 20 min. bread 45-60 min.
