Number of Servings: 6

Ingredients

    3 cups (uncooked) Barilla Plus Pasta
    1 large Red Pepper (diced)
    1 cup chopped zucchini
    1.25 cups chopped cucumber
    8 tbsp Light Mayonnaise
    2 tsp chopped green onion
    18 cherry tomatoes
    Salt
    Pepper

Directions

Cook pasta. Chop and dice vegetables (except cherry tomatoes). Combine and mix cooked pasta and zucchini, red pepper, and cucumber. Stir in mayonnaise. Sprinkle green onion on top. Season to taste.
When ready to serve, add cherry tomatoes on top.
