    1 avocado, chopped
    1 cup or 3 freshly 'cobbed" cobbs of corn
    1 red pepper, finely diced
    1 red onion, finely diced
    2 cloves of garlic, minced
    lime juice of 2 limes
    1 Tbsp olive oil
    1/3 Cup red wine vinegar
    1 Tbsp cumin
