Ingredients

    Whole Chicken
    1 teaspoon salt
    I large onion

Directions

Use a teflon Dutch oven if you have one, otherwise just a Dutch oven will do. Dice a large onion and place on the bottom of the Dutch oven in the middle. Wash a whole chicken thoroughly inside and out being careflu to thoroughly remove the blood and loose flesh inside the chicken. Sprinkle 1/2 teaspoon salt inside and 1/2 outside being sure to cover the legs and wings. Tuck wings under the back. Place breast side down on top of the chopped onions. Turn the gas burner on high and place covered Dutch oven on it. Leave on high until you hear it sizzle then turn down to simmer. Simmer for 1 and 1/2 hours until done. (wings will split slightly at joint).
