These are super easy to make and aren't THAT bad on calories for enchiladas anyway...These can be made vegan with vegan cheese and tortillas! These are super easy to make and aren't THAT bad on calories for enchiladas anyway...
These can be made vegan with vegan cheese and tortillas!
Number of Servings: 4
Ingredients

4 Large Burrito-Sized Tortillas
1 Cup of Shredded Cheese
1 Can Red Chili Enchilada Sauce
10 Jumbo Black Olives
1 Cup Diced Onions (I used green)
0.25 cup Chopped Lettuce to top
Directions
Obtain a rectangular baking dish.
Spray dish with a little bit of cooking spray.
Chop up your onions, and olives into bite-sized pieces and place in a small bowl.
Pour just enough sauce to cover the bottom of the dish.
Fill each tortilla with desired amount of cheese, and 1/4 mixture of onions, and olives.
Roll each enchilada, and place in dish side by side.
Top with remainder of enchilada sauce and remainder of cheese.
Bake for about 10 - 15 minutes on 375oF.
Let cool about 5 minutes.
Top with lettuce and serve.
Maybe for a side dish do some fat free black beans :)
