Ingredients
-
Broccoli, Cauliflower, Onions, Garlic, Cream Cheese, Cheddar Cheese and spices. It's that simple!
Add additional spices such as cuman, curry, or rosemary for variety.
For extra flavor, you may also choose to add red peppers to vegetable mix while steaming
Directions
Pour 2 cups water (for steaming) into a large pot with steamer insert. The water should be just enough to meet the steamer but not cover vegetables.
Rinse and cut cauliflower into 4 sections and remove excess leaves. Separate florets and place into pot. You can chop the stalk and use as well.
Rinse and cut broccoli florets and place into pot over cauliflower. You can also chop and use the stalk if desired. Chop onions and garlic and add to pot.
Heat on high until water boils. Turn down to medium and steam for 25-20 minutes. When florets are very tender, place into a blender or food processer. (Depending on the size of your blender or food processer, you might need to do this in two batches.) Add cream cheese and cheddar cheese, salt, pepper, and any other desired spices. Puree until completely creamy. Serve as soup or chill and serve as a dip.
