Ingredients

    1 cup orzo
    1 cup red pepper, chopped
    1 cup cucumber, chopped
    24 grape tomatoes, sliced in two
    1/3 cup red onion, chopped
    12 jumbo black olives, sliced in two
    1/2 cup feta cheese, crumbled
    2 tablespoons white wine vinegar
    3 tablespoons lemon juice
    1 teaspoon lemon zest
    1 clove garlic, minced
    1 tablespoon olive oil
    1 tablespoon Dijon mustard
    1 tablespoon honey
    1 teaspoon sugar
    1/2 teaspoon dried basil leaves

Directions

Cook orzo according to package directions; drain. Combine orzo with red pepper, cucumber, tomatoes, onions, olives and feta.
In a separate bowl, whisk to combine vinegar, lemon juice, zest, garlic, olive oil, mustard, honey, sugar and basil; pour over orzo mixture and stir.
Cover and refrigerate at least two hours or overnight. Toss again just before serving.

    Very Good
    We liked the idea of adding dijon mustard! We omitted the honey (unnecessary calories) and added a ton more basil and garlic. We also added oregano (what's Greek without oregano?!), artichokes, and black pepper. Thanks for sharing! - 4/21/13
