Introduction

Adapted form the "Black Beans, Corn and Rice" recipe on Food.com. Serve over brown rice (nutritional info not included) or with baked tortilla chips. Ingredients

    1 Can black beans, drained and rinsed
    1 can corn, drained or 2 C. frozen corn
    4 fresh tomatoes, diced
    1/2 C red onions, chopped
    1/2 C cilantro, chopped
    1 jalapeno pepper, seeded and diced
    2 T fresh lime juice
    1/2 t salt
    1/4 t fresh ground pepper
    2 dashes hot sauce (optional)

Directions

Combine all the ingredients!

*Serve over hot brown rice. (NOT included in the nutritional info.)

*Substitutions: I used a can of Rotel, drained in place of the fresh tomatoes and jalapeno. I also used bi-color frozen corn. Pretty AND yummy!

*I did not use the hot sauce because my daughter won't eat hot stuff, but I am certain it would be wonderful!

*You could add cooked, diced chicken breast and the rice and wrap it in tortillas... again, nutritional info not included above.
