Ingredients

4 cups vegetable stock
2 tsp grated fresh ginger
1 clove of garlic (finely chopped)
1 tsp Asian style chili sauce
6 – 8 shiitake mushrooms, thinly sliced (stems removed)
½ lb oyster mushrooms (thinly sliced)
3 tbsp white miso
½ cup brown mushrooms, thinly sliced (stems removed)
2 green onions, finely chopped
Directions
Makes 4 servings
Combine the stock, ginger, garlic and chili sauce in a soup pot. Bring to a simmer. Add the mushrooms and simmer until just tender, about 3 – 4 minutes. Stir in miso until it dissolves. Stir in the green onions and heat for about 1 minutes. Ladle the soup into bowls and serve with brown rice and green tea.
