Ingredients

    4 Whole Wheat Flour Tortillas (like La Banderita brand)
    8 oz Neufchatel Cream Cheese (or light/lowfat cream cheese), softened to room temperature
    1 - 15.5 oz can Black Beans
    1/2 cup Chunky Salsa
    1/4 cup Green Onion, diced
    1/4 cup Fresh Chili Pepper, diced (could use bell for milder flavor)
    1 Tbsp Cumin, ground
    1/4 cup Cilantro, chopped

Directions

Wrap tortillas in a papertowel and microwave on medium setting for 20 seconds, or until warmed and pliable.

Spread each of 4 tortillas with Cream Cheese.

In a small mixing bowl, combine Black Beans, Salsa, Onion, Chili Pepper, Cumin and Cilantro. Spread 1/4 of mixture onto each tortilla, spreading evenly and firmly into cream cheese.

Starting at one end, roll each tortilla snuggly. Insert 6 toothpicks at even spacing through rolled tortilla. Slice carefully with a sharp knife to give you 6 pinwheels per tortilla. Serve chilled or at room temperature.

Serving Size: Makes 24 pinwheels: 4 filled & rolled tortillas cut into 6 pinwheels each
