Introduction

Meatloaf with a tasty twist! Its a simple recipe and you can easily sneak in any of your favorite vegetables. Meatloaf with a tasty twist! Its a simple recipe and you can easily sneak in any of your favorite vegetables.
Number of Servings: 8

Ingredients

    1 lb Ground Beef
    2 Egg Whites
    1 tbsp Garlic Powder
    1 tsp Salt
    1/2 cup Chopped Tomatoes
    1/2 cup Green, Yellow AND Orange Bell Pepper
    1/4 cup Chopped Onion
    Ketchup

Directions

1. Preheat oven to 350 degrees.

2. Chop veggies into small pieces, you're going to be mixing it with the meat.

3. Leaving out the tomatoes, saute the veggies in a very small amount of olive oil (unless you like crunch in your veggies). Don't over do it on the stove though, you don't want them to be mushy!

4. Let the veggies cool and reunite them with the tomatoes.

5. Add the garlic powder and egg whites to meat mixture, along with the cooled veggies.

4 .Grease the muffin pan and place on a cookie sheet if you don't have something protecting bottom of oven, it is most likely going to drip out a little bit.

5. Scoop the total mixture into the pan and top off with 1 tbsp of ketchup on each muffin.

6. Throw it in the oven for 40-45 minutes.
