Ingredients

    1 cup dry quinoa
    1 medium red pepper
    2 green onions
    1 english cucumber
    1/4 cup shredded carrot
    1 can, drained/rinsed garbanzo beans
    1 can drained/rinsed olives
    2 Tbsp italian or champange vinigrettesalad dressing
    1 cup vegetable broth

Directions

Rinse quinoa and cook according to instructions, add vegetable bullion or replacing some water with broth. Chop veggies. Mix everything together and season to taste with salt and pepper. Chill. Portion out for lunch for the week.
