Ingredients

    2 cups 1% cottage cheese
    1 pkg (10 oz) frozen whole leaf spinach, thawed
    3 eggs
    1/2 cup Naturegg Simply Egg Whites (4 egg whites)
    1/4 cup crumbled feta cheese
    2 tsp VE Spinach Dip Mix
    1 tsp VE Minced Garlic
    Pam cooking spray

    Black pepper, to taste

Directions

~ Preheat oven to 350*.
~ Lightly spray 9 x 13' glass baking dish with cooking spray.
~ Thaw and squeeze excess moisture from spinach.
~ In a medium sized mixing bowl beat eggs and egg whites until frothy.
~ Add cottage cheese, VE Spinach Dip, VE Minced Garlic and spinach to eggs and stir until well blended.
~ Pour egg mixture into prepared dish and crumble feta cheese on top. Add black pepper, to taste.
~ Bake at 350* for 35-40 or until knife inserted in the centre comes out clean.

Serving Size: Makes 6 - 3 inch pieces
