Ingredients

2 cup, chopped or diced Turkey breast
2 cup, chopped Onions
1.5 cup, diced Celery,
3 carrot medium Carrots, chopped
1 cup, chopped Scallions
2 tbsp Minced Garlic
3/4 cups uncooked Brown Rice, medium grain
3 quarts of Water
2 tbsp powdered Chicken boullion
sea salt, pepper, lemon pepper, cajun seasoning, ground coriander
Directions
In a large stock pot:
Add 1 quart of water (or 1 quart turkey/chicken stock), bring liquid to a boil
Add turkey, onions, celery, carrots, scallions, garlic, and remaining water
Stir in powdered chicken boullion if stock wasn't added in the beginning
Add rice
season to taste with salt, pepper, cajun seasoning, and coriander.
Bring to a boil, and simmer on med/low heat for a minimum of 1 hour.
Serving Size: 10 1-cup servings
