Ingredients

    1/2 C Broccoli, chopped
    1/4 C Celery, diced
    1/4 C Onion, diced
    2 Black Olives, diced
    1/4 C Tomatoes, diced
    2 oz Chicken Breast, broiled
    2 tsp Lemon Juice
    2 tsp Dijon Mustard
    1 tsp Olive Oil
    2 tsp Red Wine or Balsamic Vinegar
    1/4 tsp Black Pepper
    1/4 tsp Italian Seasoning
    1 oz Whole Wheat Pasta (2 oz cooked)
    Ice cubes


Directions

Cook pasta according to package, drain. Add ice to cooked pasta, toss and set aside to cool (or refrigerate).

Combine mustard, vinegar, lemon juice, italian seasoning, olive oil and pepper to make a dressing. Mix well.

Dice vegetables and toss with chicken, pasta and dressing.

(Can be refrigerated once mixed to make it colder)
