Introduction

Simple and quick ground turkey, wild rice and whole wheat wrap. Great for a lunch, snack or main course. Simple and quick ground turkey, wild rice and whole wheat wrap. Great for a lunch, snack or main course.

Ingredients

    8 oz. lean ground turkey
    4 Mission low carb whole wheat tortillas (7 inches)
    2 oz. of low fat cheddar cheese (shredded)
    1 cup Uncle Ben's wild rice
    4 tbsp LaVictoria thick, chunky salsa (medium)
    20 slices of fresh mushrooms
    20 sprays of I Can't believe It's Not Butter spray. (5 per wrap)
    1 dash of black pepper per wrap.




Directions

In a skillet:

-Brown 8 oz. lean, ground turkey.

In a small soup pot:

-Prepare Uncle Ben's long grain wild rice (I use the quick cooking type)

Mix ingredients:

-Mix the cooked rice with the browned turkey in the skillet.
-Heat on low for 5 minutes, covered.
-Remove ingredients from the skillet into a bowl.
-Cover the bowl
-Heat the tortillas individually in the skillet. Spray 5 spray of "I Can't Believe It's Not Butter" on each tortilla. Do not overheat. The tortillas should be warm and pliable.

Wrap:

-Lay a tortilla out on a plate
-Make a line in the center of the tortilla with 1/2 oz of shredded low fat cheddar cheese.
-In a line, cover the cheese with 1/4 of the turkey and rice mixture
-Add 5 sliced mushrooms per wrap
-Add one dash ground, black pepper
-Fold in one end of the tortilla
-Fold over one side of the tortilla
-Wrap tortilla
-Garnish with 1 tbsp of salsa.

Enjoy.

This is a very simple version. You can add all kinds of different ingredients to this. I've added sour cream, guacamole, onions, tomatoes,beans and other ingredients depending upon who is eating it and what the occasion might be.

Makes 4 wraps.
