Ingredients

Sauce:
6 T water
6 T low sodium soy sauce
3 T dry sherry
3 t sugar
1 T cornstarch
3/4 t white pepper
3/4 t red pepper flakes
3/4 t dry mustard
Stir-fry:
2 T canola oil
1 lb green beans, trimmed and cut into 2-inch pieces
1 lb ground chicken breast
4 garlic cloves, minced
1 T grated or minced ginger
3 green onions, sliced on the bias
Directions
Mix all ingredients for sauce and set aside.
Heat oil in a large skillet over high heat until it starts to smoke. Add the green beans and cook for 5-8 minutes, stirring frequently, until they are dark, shriveled and spotted in places. Remove beans to a serving bowl.
Add chicken directly to the hot skillet (turn down heat to medium-high). Add another 1 T oil to saute.
Stir fry the meat for 2 minutes or until it is no longer pink, stirring almost constantly. Add the ginger and garlic and stir constantly for 30 seconds.
Add the sauce (re-whisk before adding because the corn starch falls to the bottom), and continue to stir and toss it with the meat for 30 seconds (it will burn if you stop stirring).
Remove pan from heat and add green onions.
Pour meat mixture over beans and serve with white rice.
