Number of Servings: 6


    1 tbsp - Olive Oil
    2 cup - Mushrooms, canned
    1 cup - Onions, raw, chopped
    3 cloves - Garlic
    1 (10 oz) - package Spinach, frozen

    1 cup - Mozzarella Cheese, whole milk, shredded
    1.5 cups - Cottage Cheese, 1% Milkfat, (not packed)
    1 - Egg white
    1 tsp - Nutmeg, ground

    1 cup - Tomato Sauce
    1 cup - Canned Tomatoes
    1 tsp - Salt
    1 tsp - Granulated Sugar
    1 tbsp - Pepper, black
    1 tbsp - Oregano, ground
    1 tsp - Thyme, ground
    1 tsp - Rosemary, dried
    1 tbsp - Basil

    9 - Whole Wheat Lasagna noodles
    0.5 cup - Parmesan Cheese, grated


Preheat oven to 350

Saute onions garlic and mushrooms in lightly oiled pan (the olive oil) at medium high heat

when liquid cookes off and onions begin to cook add the thawed drained spinach cook until liquid cooks off

mix together the cottage cheese and mozzarella with the egg white and nutmeg

mix the mushroom spinach mixture into the cheese mixture

mix the diced canned tomatoes (drained) with the tomato sauce, sugar and remaining spices

in a deep pan (11x7in) lay down :

-a layer of tomato sauce just covering the bottom
-then 3 uncooked noodles
-another layer of tomato sauce
-then half of the cheese mixture
-3more noodles press them down slightly
-then more sauce
-the rest of the cheese mixture
-the last 3 noodles
-more tomato sauce
-then sprinkle top with parmasan cheese

bake in preheated oven for 40 minutes
then let cool for 10 minutes
cut into 6 pieces
