Introduction

Not very low-cal, but a tasty way to get your tuna in. Not very low-cal, but a tasty way to get your tuna in.
Number of Servings: 8

Ingredients

    6 medium potatoes, peeled and thinly sliced
    3 tbsp butter
    2 shallots, sliced
    1 medium onion, chopped
    3 tbsp flour
    2 1/4 cup 1% milk
    pinch each of black pepper and salt
    1/4 tsp mustard
    2 cans flake light tuna in water
    1/2 cup mayonnaise
    1/2 cup shredded cheddar cheese
    1/2 tsp paprika

Directions

Slice potatoes thinly.
Saute onion and shallots in butter
Stir in flour until smooth
Add milk, salt and pepper
Cook, stirring, until thickened
Add mustard
Place potatoes in 11x7 baking dish and pour mixture over potatoes
Bake, covered, for 45 minutes
Remove from oven, add layer of tuna
Combine mayonnaise and cheese, spread over tuna
Sprinkle with paprika
Return to oven, uncovered, for 10-15 minutes
