Number of Servings: 8


    2 cups cooked cauliflower (fresh or frozen)
    2 cups cooked broccoli (fresh or frozen)
    1 can condensed broccoli cheddar soup
    1/2 c 1% milk
    1 t salt
    1/4 t pepper
    1 t garlic powder (or 1-1/2 t dried minced garlic)
    1 cup shredded 2% milk cheese
    1/2 stick butter
    1/2 package Ritz crackers (approx. 3 servings)


Preheat oven to 400 degrees. Combine soup, milk, salt, pepper and garlic, then stir in veggies and cheese. Pour into square or round casserole dish, top with 1/2 of butter in pieces. Cook for 15 minutes and stir. Top with crushed Ritz crackers and remaining butter, melted. Cook for an additional 15 minutes or until brown and bubbly!
