Ingredients

    4 fish fillets
    4 tomatoes chopped
    10oz of thawed frozen spinach
    1 cup chopped onion
    3 garlic gloves crushed
    4 tbsp olive oil
    2 tbsp capers
    dash of salt and pepper
    crushed coriander seeds
    fresh rosemary

Directions

saute onion and garlic and coriander, add tomatoes and simmer for a while and then add spinach, salt and peooer, cook for 10 min. add rosemoary and capers and
pour sauce in a oven proof bowl and place fillets on top...salt and pepper fish and place in oven at 180C for and cook for 20-25 min
